CHICKEN DI CAPRI

Serves 4 People

INGREDIENTS

  • 1 Italian sachet
  • 2 red onions
  • 2 cloves of garlic
  • 25g butter
  • 4 chicken breasts or chicken thighs
  • 1 tin of chopped tomato
  • 1 yellow pepper
  • 1/2 lemon
  • 100g black olives
METHOD

  1. Finely dice 1 large onion.

  2. In pan, mix onion with 1 Italian sachet, then heat pan and gently fry on a medium heat for 5 minutes.

  3. Remove contents from pan and melt a knob of butter on a medium heat.

  4. Add 4 chicken breasts or thighs and cook until golden brown on both sides.

  5. Add cooked onions, tomatoes, peppers, olives and simmer for 25 mins on low heat until chicken is cooked through.

  6. Lastly, squeeze in half a lemon and season with lots of black pepper.

  7. Serve with rice or new potatoes and vegetables of your choice.

PROFESSIONAL TIPS

  • Add a dash of red wine
  • 2 tsp of red pesto
  • Roast pepper in oven first for a sweeter roasted taste.
  • Add capers for a true authentic taste.
