ITALIAN CHICKEN

(Serves 4 People)

INGREDIENTS

  • 1 Italian sachet
  • 2 red onions
  • 25g butter
  • 4 chicken breasts or 6 chicken thighs
  • 150ml of long life double cream
  • PROFESSIONAL TIPS

  • Add a dash of white wine
  • Use crème fraiche for a lighter dish
  • Use long life cream it will not curdle
METHOD

  1. Finely dice 1 large onion.

  2. In pan mix onion with 1 Italian sachet, then heat pan and gently fry on medium heat.

  3. Meanwhile in separate pan, melt a knob of butter.

  4. Add 4 chicken breasts and cook through (approx 25 mins).

  5. When chicken is ready, add paste, 150ml of double crème, constantly stirring, and simmer for a few minutes.

  6. Serve with rice or new potatoes and vegetables of your choice.
