MEDITERRANEAN TART

(Serves 4 People)

INGREDIENTS

  • 1/2 Italian sachet
  • 1 red onion
  • 1 aubergine
  • 1 courgette
  • 200g puff pastry
  • 100g goats cheese
  • PROFESSIONAL TIPS

  • For extra flavour add balsamic vinegar and garlic when roasting.
  • To finish add a sprig of fresh basil when serving.
METHOD

  1. Chop 1 onion, 1 courgette, 1 aubergine and place in roasting dish with ½ Italian sachet.roast in oven at 220°C for 30 mins, string occasionally. Meanwhile roll out pastry and place cooked vegetable in centre of pastry (leave 2cm around edges). Cook at 200°C for 20 mins.

  2. .Roast in oven at 220°C for 30 mins, string occasionally.

  3. Roll out puff pastry and prick base with fork.

  4. Place cooked vegetable in centre of pastry (leave 2cm around edges). Cook at 200°C for 15 mins.

  5. Sprinke with cheese and cook for an extra 5 minuites
