CHILLI CON CARNE

Serves 4 People

INGREDIENTS

  • 2 Mexican sachet
  • 2 red onions
  • 500g beef mince
  • 40 g tomato puree
  • 2 tins of chopped tomatoes
  • 2 tins of kidney beans
  • 1 cube of beef stock
  • tbl brown sugar or dark chocolate
  • 1 fresh chilli
  • 1 fresh lime
  • Handful of fresh coriander
METHOD

  1. Finely dice 2 red onions.

  2. Mix 2 Mexican sachet and gently fry.

  3. Add 500g of mince and brown well and add tomato puree (try and cook on low heat for 20 mins to add flavour).

  4. When mince is cooked, add chopped tomatoes, kidney beans, beef stock, brown sugar, chilli and lime juice.

  5. Simmer for at least 2 hours minutes to develop the flavour.

  6. Add fresh coriander and serve with rice.

PROFESSIONAL TIPS

  • Add some smoked paprika.
  • Try and cook chilli one day before for extra flavour.
  • Transform your meal and serve with, shredded iceberg lettuce, salsa, guacamole, grated cheese and sour cream.
